Heart-Shaped Vegetable and Goat Cheese Frittata

Bell peppers
¼ cup, diced

Spinach
1 cup, chopped

Goat cheese
¼ cup, crumbled

Instructions:

Preheat oven to 375°F (190°C).
In a large mixing bowl, whisk together eggs, milk, salt, and pepper.
Heat olive oil in a 9-inch oven-safe skillet over medium heat. Add onions, bell peppers, and spinach and cook until the vegetables are tender, about 5 minutes.
Pour the egg mixture into the skillet with the vegetables and sprinkle the diced tomatoes and crumbled goat cheese on top.
Using a cookie cutter or a sharp knife, shape the frittata into a heart shape.
Bake in the oven for 20-25 minutes, or until the frittata is set and golden brown on top.
Let cool for 5 minutes, then serve hot.

 

Strawberry and Arugula Salad with Balsamic Glaze

Walnuts

Feta cheese
¼ cup, crumbled

Balsamic vinegar
½ cup

Honey
2 tbsp

Instructions:

In a large salad bowl, combine the arugula, sliced strawberries, chopped walnuts, and crumbled feta cheese.
In a small saucepan, heat the balsamic vinegar and honey over medium heat. Stir occasionally until the mixture has reduced and thickened, about 10 minutes.
Drizzle the balsamic glaze over the salad and gently toss to combine.
Serve immediately and enjoy this light and healthy Valentine’s Day treat with your loved one.
