Heart-Shaped Vegetable and Goat Cheese Frittata

Instructions:
Preheat oven to 375°F (190°C).
In a large mixing bowl, whisk together eggs, milk, salt, and pepper.
Heat olive oil in a 9-inch oven-safe skillet over medium heat. Add onions, bell peppers, and spinach and cook until the vegetables are tender, about 5 minutes.
Pour the egg mixture into the skillet with the vegetables and sprinkle the diced tomatoes and crumbled goat cheese on top.
Using a cookie cutter or a sharp knife, shape the frittata into a heart shape.
Bake in the oven for 20-25 minutes, or until the frittata is set and golden brown on top.
